
Nothing is better than a protein packed, satisfying egg sandwich for breakfast (or lunch…or dinner). Chef Geo’s take on the classic breakfast sandwich incorporates a spicy sweet potato bun that doesn’t just taste amazing, but will leave you feeling satisfied and ready to take on the day ahead.
Ingredients
Recipe yields: 1 Sandwich
- 1 large sweet potato
- 3 slices of brie cheese
- 3 large egg whites
- 1 egg
- 1 Roma tomato
- 2 Tbsp Sriracha seasoning
- ¼ cup red onion, thinly sliced
- ¼ cup mushrooms, sliced
- 2 Tbsp of coconut oil

Steps to Follow
1 PREPARE THE GOODS
Cut the sweet potato length wise for 2 ¼ inch slices – leave the skin on.
2BOIL & SEASON
Boil the potato for 8 minutes in water. Remove from water, sprinkle some Sriracha seasoning and sauté in 1 tbsp of oil until golden brown, then set aside. **Be careful not to break the potato.
3TIME FOR THE PROTEIN
In a frying pan, turn the heat to medium or #5 – once it’s hot, add the oil. In a bullet blender, blend the eggs. Then, sauté the mushrooms in the frying pan for 2 minutes and add the eggs. Cook until golden brown and no longer runny
4SERVE IT UP
Assemble your sandwich in this order: add 1 slice of sweet potato, then eggs, brie cheese, tomato, and then the second slice. Sprinkle Sriracha seasoning on top and ENJOY!
