Start your St. Patrick’s Day celebration in the kitchen with these deliciously green protein patty cakes! This Irish-inspired recipe from Chef Geo is quick, easy and oh-so-festive.

The green in these healthy protein patty cakes comes from spinach, an excellent source of antioxidant nutrients including vitamin C, vitamin E, vitamin A, zinc and manganese.

Top with honey for an extra dose of sweetness, and your patty cake stack is practically a pot of gold!

Ingredients:

  • 3 egg whites
  • 1/3 cup cottage cheese
  • 1/3 cup old-fashioned oats
  • 1/3 scoop of BPI Sports Best Protein™ in Vanilla Swirl
  • 1 cup spinach
  • Honey, for topping
  • Non-stick cooking spray

Instructions:

Blend the first five ingredients together in a blender while you heat a skillet over medium heat. Spray the skillet with non-stick spray. Once hot, pour the batter onto the skillet to create the patty cakes. Cook until small bubbles start to form on the top and then flip. Cook until the other side is golden brown, about 2 minutes. Stack your patty cakes on a plate (preferably green), top with honey and enjoy!
